RECIPE: Tortellini w/tomatoes, basil, and corn

Hey there blog! I have a lot of catching up to do!! Hey friends! I have been lazy with my blogging but plan to do some catching up with lots of fun posts and a giveaway at the beginning of August! 

Today I have a really tasty easy recipe for you! I made this for lunch and it was super delicious. 


The stars of the meal:
The mini spinach cheese tortellini was the perfect size! I recommend getting small or mini tortellini. The corn and small tomatoes came from a farm close to us...Green Door Gourmet, the large yellow tomatoes came from my parents garden, and that basil is in our backyard! Everything was super fresh which I think made this dish extra tasty! 

Here's how easy this is:
Boil your pasta( I only used a bout 1/3 of the bag. If you use the whole bag, just double what's below. ). Once cooked, rinse with cold water and pop in the fridge.
Cut up 1-2 large tomatoes or 2 handfuls of small tomatoes. 
Chop up 7 or 8 basil leaves and cut corn off of 2 cooked ears of corn
**If you can get the veggies fresh from a farm or farmers market, I would recommend doing so. If you can't, that's ok too! 



Once everything is chopped, add to your bowl of cold pasta. There are numerous types of dressing you could add. Any type of vinaigrette would be great. I just kind of threw some stuff together! haha. It wasn't horrible if you want to try it!

Rachel's vinaigrette:
1/4 Cup of olive oil
1/2 TBSP of balsamic vinegar
Juice from 1/2 lemon
1/2 clove of minced garlic
1 TBSP of dijon mustard
Salt
Pepper

Mix together and pour over pasta. Enjoy!
