While cleaning out a huge stack of magazines 2 days ago from our bookshelf, I ran across a Real Simple magazine with the words "A Month Of Easy Dinners" in huge black letters smack dab in the middle of the cover.
I quickly flipped to page 200 where I found you guessed it a whole month of dinners! I started reading over some of them to see if they 1. looked good and 2. would be some what easy to make. They were all tasty looking and didn't seem to be too time consuming so I ripped them all out and they are on our menu board in the kitchen! We had our first dinner from the magazine last night and it was so yummy!! Before I get to the details of last nights meal, here is the menu for the week...
Side note, One of the many things I love about my husband is that he is not a picky eater...neither am I. We pretty much enjoy every kind of food! So I knew when I saw some foods on the menu that we don't ever eat, that he would be up for it anyways...and he was!
Last nights meal was so light and tasty and oh so healthy. It took me only about 20 minutes to make! There were only 7 ingredients including salt and pepper. That's my kind of recipe!! I started by cooking the tilapia fillets in a tablespoon of olive oil over medium/high heat. While those were cooking, I sliced the onion and pepper and got them going in a different pan in a tablespoon of olive oil. The fish only took about 10 minutes...5 min on each side. I set it side when it was done. When the onions and peppers became a bit translucent and tender, I added the olives, parsley, lime juice, and salt & pepper. And that's it!
Love cooking with fresh fruits and veggies. We shop mostly at Whole Foods. Brent and I just love the quality of food there!
It was quick, easy, and super delicious.
The first night of this months meals was a huge success! Tomorrow is beef and bok choy stir fry.
