Happy Friday!! {Food Edition!}


Happy Friday Y'all!! We have a fun weekend planned and I am excited about it! I am going to declare today's blog post "What we have had for dinner lately & their recipes" day! These meals were all so yummy and simple to make. They also included foods that we probably wouldn't have picked out at the grocery store to eat. We have had some really tasty things lately so I wanted to let y'all in on the yumminess too! 


Yumm-o is all I can say about this dish. We had this last night and will definitely fix it again. Neither Brent nor I had ever eaten parsnips before. They are like a sweet carrot. Mixed together with the potatoes and you have some yummy tatersnips( potato/parsnip)! I wanted to include the recipes to all the meals and how-to's in case y'all wanted to try them out too.





So we would have never ever picked out brussels sprouts to eat for dinner had this recipe not had them. We read the recipe and decided that it sounded kind of good and we gave it a shot. Once again, this meal was delicious. The brussels sprouts were mixed with apricots which gave the side a great flavor. All of these meals are nice and light. 

It only took 25 minutes to make!



This made from scratch soup was quick and easy especially since it called for a rotisserie chicken. I loved all the veggies. Have you ever had hominy? It was in the soup. I had never had it before. I don't really care for it  and if we decided to make the soup again, I would probably substitute the hominy with just plain corn. And maybe white potatoes to add hardiness. The hominy had the consistency and flavor of a potato. 




And this is just for fun...a real cute factor! I saw heart shaped marshmallows on Pinterest and decided to give it a whirl!

I cut a jumbo marshmallow in half and then used my tiny heart shaped cutter to cut out a little heart.
